Ingredients:
• 200g kataifi pastry (shredded phyllo dough)
• 150g fresh mozzarella, cut into small strips
• 10–12 cherry tomatoes, halved
• Fresh basil leaves
• 3 tbsp olive oil or melted butter (plus extra for brushing)
• Salt and pepper to taste
Instructions:
1. Prepare the filling:
• Slice the cherry tomatoes in half and season lightly with salt and pepper.
• Combine the mozzarella strips, cherry tomato halves, and basil leaves in a bowl.
2. Assemble the rolls:
• Take a small portion of kataifi pastry and spread it out into a thin rectangle.
• Place a few pieces of mozzarella, a cherry tomato half, and a basil leaf on one end.
• Roll the pastry tightly around the filling, tucking the edges as you go to seal.
3. Brush with oil:
• Lightly brush each roll with olive oil or melted butter to achieve a crispy finish.
4. Bake or air fry:
• Baking: Preheat the oven to 180°C (350°F). Place the rolls on a baking sheet lined with parchment paper and bake for 20–25 minutes, or until golden and crispy.
• Air frying: Preheat the air fryer to 180°C (350°F). Arrange the rolls in a single layer and air fry for 10–12 minutes, or until golden and crisp.
5. Serve:
• Serve warm as an appetizer or snack, optionally with a drizzle of balsamic glaze for extra flavor.
