Ingredients:

      •     250g kataifi pastry (shredded phyllo dough)

      •     2 medium zucchinis, grated

      •     200g feta cheese, crumbled

      •     2 eggs, lightly beaten

      •     2 tbsp olive oil or melted butter (plus extra for brushing)

      •     1 tbsp fresh dill or parsley, chopped (optional)

      •     Salt and pepper to taste

Instructions:

      1.    Prepare the filling:

      •     Grate the zucchinis and squeeze out excess liquid using a clean towel or cheesecloth.

      •     In a bowl, combine the grated zucchini, crumbled feta, beaten eggs, olive oil, dill (if using), and a pinch of salt and pepper. Mix well.

      2.    Assemble the pie:

      •     Preheat your oven to 180°C (350°F) or your air fryer to the same temperature.

      •     Grease a round or square baking dish.

      •     Take half of the kataifi pastry and spread it evenly in the dish to form the base. Lightly brush it with olive oil or melted butter.

      •     Spread the zucchini and feta mixture evenly over the kataifi base.

      •     Cover the filling with the remaining kataifi pastry, spreading it out evenly. Brush the top generously with olive oil or melted butter to ensure crispiness.

      3.    Bake or air fry:

      •     Baking: Place the dish in the oven and bake for 30–35 minutes, or until the kataifi is golden brown and crisp.

      •     Air frying: If using an air fryer, use a suitable pan and bake for 20–25 minutes, checking for even browning.

      4.    Serve:

      •     Allow the pie to cool slightly before slicing. Serve warm as a main dish, side, or appetizer.
