Kataifi Rolls with Spinach, Eggs, and Feta Cheese: Delicate kataifi pastry wrapped around a hearty filling of sautéed spinach, scrambled eggs, and tangy feta cheese. Brush with butter, roll tightly, and bake until crisp and golden for a savory, Mediterranean-inspired treat.
Ingredients:
• 200g kataifi pastry (shredded phyllo dough)
• 200g fresh spinach, chopped
• 150g feta cheese, crumbled
• 2 eggs, lightly beaten
• 2 tbsp olive oil or melted butter (plus extra for brushing)
• Salt and pepper to taste
Instructions:
1. Prepare the filling:
• Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the chopped spinach until wilted. Remove from heat and let it cool.
• In a bowl, mix the sautéed spinach, crumbled feta, beaten eggs, and a pinch of salt and pepper.
2. Assemble the rolls:
• Take a portion of kataifi pastry and spread it into a thin rectangle.
• Place a spoonful of the spinach, egg, and feta mixture on one end.
• Roll the pastry tightly around the filling, tucking the edges as you go to seal.
3. Brush with oil:
• Lightly brush each roll with olive oil or melted butter to ensure a crispy finish.
4. Bake or air fry:
• Baking: Preheat the oven to 180°C (350°F). Place the rolls on a baking sheet lined with parchment paper and bake for 20–25 minutes, or until golden and crisp.
• Air frying: Preheat the air fryer to 180°C (350°F). Arrange the rolls in a single layer and air fry for 10–12 minutes, or until golden and crispy.
5. Serve:
• Serve warm as a savory snack or appetizer. Optionally, pair with a side of yogurt dip or tzatziki.
Enjoy your delicious spinach, egg, and feta kataifi rolls!
