Ingredients:

      •     200g kataifi pastry (shredded phyllo dough)

      •     200g fresh spinach, chopped

      •     150g feta cheese, crumbled

      •     2 eggs, lightly beaten

      •     2 tbsp olive oil or melted butter (plus extra for brushing)

      •     Salt and pepper to taste

Instructions:

      1.    Prepare the filling:

      •     Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the chopped spinach until wilted. Remove from heat and let it cool.

      •     In a bowl, mix the sautéed spinach, crumbled feta, beaten eggs, and a pinch of salt and pepper.

      2.    Assemble the rolls:

      •     Baking: Preheat the oven to 180°C (350°F). Place the rolls on a baking sheet lined with parchment paper and bake for 20–25 minutes, or until golden and crisp.

      •     Air frying: Preheat the air fryer to 180°C (350°F). Arrange the rolls in a single layer and air fry for 10–12 minutes, or until golden and crispy.

      5.    Serve:

      •     Serve warm as a savory snack or appetizer. Optionally, pair with a side of yogurt dip or tzatziki.
