The challenge
Kim and Andrew, a creative pastry duo based in South Korea, aimed to introduce kataifi-based desserts to a market traditionally dominated by Western-style pastries. Their concept focused on crafting delicate kataifi nests and cookies infused with Korean-inspired flavors such as matcha, yuzu, and honey almond.
However, sourcing consistent, high-quality kataifi proved to be a major obstacle. Imported products were expensive and unreliable, while manual preparation was time-consuming and inconsistent. The lack of uniformity made it difficult to standardize recipes and meet the demands of upscale cafés and boutique dessert shops.
Solutions
To overcome these challenges, Kima and Andrew invested in a professional kataifi production machine from Octofoods. The machine allowed them to manufacture fresh kataifi locally with precise thickness and texture control, ensuring perfect results for their artistic dessert creations.
This technological upgrade enabled them to scale production while maintaining craftsmanship. Their kataifi nests became a signature item, used as edible containers for creams, fruits, and chocolate fillings, while their kataifi cookies gained popularity for their crisp texture and unique appearance.
Key Outcomes
Their products quickly attracted attention on social media and in specialty dessert exhibitions. High-end cafés began placing regular bulk orders, and their brand became known for introducing a new dessert category to the Korean market.
Today, Kim and Andrew supply kataifi-based desserts to multiple cities across South Korea. They are currently developing frozen dessert kits and planning collaborations with international chefs, confident that their production system can support future innovation and growth.
