Kataifi Rolls with Mozzarella, Basil, and Mushrooms: Crispy kataifi pastry encasing a savory filling of melted mozzarella, sautéed mushrooms, and fresh basil. Roll the mixture tightly in butter-brushed kataifi strands, bake until golden, and serve warm for a delightful appetizer or snack.

Ingredients:

      •     200g kataifi pastry (shredded phyllo dough)

      •     150g fresh mozzarella, cut into small strips

      •     100g mushrooms, finely chopped and sautéed

      •     Fresh basil leaves

      •     3 tbsp olive oil or melted butter

      •     Salt and pepper to taste

Instructions:

      1.    Prepare the filling:

      •     Sauté the chopped mushrooms in a bit of olive oil until soft. Season with salt and pepper, then set aside to cool.

      2.    Assemble the rolls:

      •     Take a small portion of kataifi pastry and spread it out into a thin rectangle.

      •     Place a strip of mozzarella, a spoonful of sautéed mushrooms, and a basil leaf on one end.

      •     Roll the pastry tightly around the filling, tucking the edges as you go to seal.

      3.    Brush with oil:

      •     Lightly brush each roll with olive oil or melted butter to ensure crispiness.

      4.    Bake or air fry:

      •     Baking: Preheat the oven to 180°C (350°F). Arrange the rolls on a baking sheet lined with parchment paper and bake for 20–25 minutes, or until golden and crispy.

      •     Air frying: Preheat the air fryer to 180°C (350°F). Place the rolls in a single layer and air fry for 10–12 minutes, or until golden and crispy.

      5.    Serve:

      •     Serve the rolls warm as an appetizer or snack. Optional: Pair with a dipping sauce like marinara or garlic aioli.
